Introduction to Bird Nest
The well-known edible "Bird's Nest" (Yan Wo as known to the Chinese) is also known as the "Caviar of the East" . These came from the nests built during the breeding season by the male swiflet over a period of 35 days. They take the shape of a shallow cup stuck to the cave wall. The nests are composed of interwoven strands of salivary laminae cement. The nests are proven to have high levels of calcium, iron, potassium, and magnesium and exceptionally rich in glycoprotein.
