Pear, Berry and Macadamia Crumble

You can have it warm or cold. Your choice!

Serves 6 • Prep time 20 minutes

Cooking time 40 mins

Equipment: 1ltr capacity baking dish; medium size saucepan; mixing bowl; knife; chopping board; wooden spoon

 

Ingredients

2 pears, peeled and chopped

250g fresh strawberries diced

300g fresh blueberries

¼ cup sultanas

¼ cup Ambrosia - Organic honey

¼ cup coconut cream, plus extra to serve

For the Crumble - Macadamia, Oats and Pepita

½ cup Whispering Pines - Organic Creamy rolled oats

¾ cup roughly chopped macadamia

½ cup pepita

2 tablespoons Pure Naturally – Virgin coconut oil

2 tablespoons Ambrosia - Organic honey

2 tablespoons Power Super Foods chia seeds

 

Method

Step 1 • Preheat oven to 180°C.

Step 2 • For the crumble, place the chopped macadamia, oats, pepita, chia seed, coconut oil and honey in a bowl and mix well to combine. Set aside.

Step 3 • Place pear, strawberries, blue berries, sultanas and honey in a medium saucepan over high heat and cook for 10 minutes, stirring occasionally.

Step 4 • Place the mixture in the baking dish, pour over coconut cream and top with the crumble mixture.

Step 5 • Place on a baking tray and cook for 20 minutes or until golden.

Step 6 • Serve with extra coconut cream. And simply enjoy!
